On the other hand, you can use transglutaminase to glue meats together. I read an article once where someone was claiming chefs are using chemicals to glue scrap meat into Filet Mignon steaks. This was published on a food blog. The facts are simple. Transglutaminase is a naturally occurring enzyme that breaks down muscle tissue. Hence, it fuses the meats together. The widespread misinformation runs rampant these days. Commonly accepted reality say's it's good enough. Some will even say it all tastes the same. Many people are scared to take the steps into healthier eating. However, there are many ways of eating the same foods you already eat. Although a burger will never be the healthiest choice, you can take the steps to do it right. That is the healthy choice. 

There are so many factors that can come into play including the surface the food is cooked on, and to what temperatures. This day and age it's safest to always try to stay factually informed. Being factual is simply taking the time to critically think and challenge your own false beliefs. Take everything that is not a fact the same as you take your food. With a pinch of salt.
